  11. Tortillas
  12. Acompañar con aguacate, cilantro picadito, limón para exprimir..

  1. Mezcla el achiote, zumos, vinagre, sal (poca) y canela.
    Disolver bien para que no queden grumos.
    Añadir la carne y dejar macerar al menos dos horas
  2. Limpiar las hojas de plátano, tostarlas al fuego o sino en la tostadora, esto le da un sabor a ahumado muy rico.
  3. Envolver la carne en las hojas de plátano (mixiotes) y hacer un lecho con las hojas, poner en la olla de cocción lenta (3 horas) o en la olla express (30 min).
    Si no encuentras hojas de plátano, no te preocupes, usa papel alumnio para hacer paquetitos con la carne.
  4. Pasado el tiempo de cocción sacar la carne y deshilacharla, añadirle el jugo que quedó de guisarla.
    Servir con tortillas, cebolla morada encurtida, aguacate y cilantro picado.

  5. Cebolla encurtida: cortar la cebolla finita y añadirle los zumos, si se quiere, añadir chile cortado y sal. Dejar macerar un buen rato.
