  8. Pasado ese tiempo, mover la tapadera dejando los orificios 30 minutos más completamente cerrados y bajando el fuego a lo mínimo. Podemos ver cómo se hornea la carne.
  9. Mientras,rebanar la cebolla en tiras delgadas,colocarlas en un tazón, picar finamente el chile habanero incorporarlo y añadir el vinagre,jugo de limón, orégano y sal.
  10. Apagar el fuego, dejar que repose 10 minutos y servir la carne tibia,bien deshebrada o en trozos (eso ya es al gusto de cada quien),arriba el curtido de cebolla y chile. Tradicionalmente se acompaña con frijol en pasta y tortillas de maíz.
