  1. En la olla Exprés poner la hoja de plátano cubriendo perefectamente la base y dejar sobrantes para poder cerrar la carne.... agregar la carne picada en trozos....
  2. En la licuadora poner las 2 barritas de achiote, los ajos y el jugo de las naranjas...si no están ácidas, agregarle el jugo de 3 limones...
  3. Agregar sal y licuar hasta que la pasta de achiote se haya disuelto completamente....vertiendo sobre la carne...
  4. Tapar con el sobrante de la hoja, y cuando comience a chillar dejarla 30 min....checar que no está muy seca para que no se pegue la hoja y ahume la carne...
  5. Retirar las hojas y lista!!!!
  6. Para la salsa : quitarles la cola a los chiles y las semillas, picar finamente la cebolla morada...
  7. Ponerlas en una olla y agregar orégano al gusto y sal y cubrirlos con vinagre blanco. Ponerla a fuego medio, cuando hierva 5 min y lista!!!!
  8. Disfruta en unas tortillas de maíz y con la salsa !!!
