- Separar los chiles de las semillas y reservar.

- En el mismo aceite que sobra de los chiles se fríe la mezcla anterior.
- Agregar la pimienta, la canela, las pasas y las almendras.
- Mover constantemente la mezcla.
- Dejar que la mezcla se cocine por un largo tiempo hasta que casi esté todo quemado.
- Llevar al molino la mezcla de especias y los chiles por separado, logrando una molienda uniforme.
- Poner a calentar en una cacerola limpia la manteca.
- Diluir un poco con agua la molienda de las especias.
- La molienda diluida de las especias, se pasa por un colador y se vierte en la cacerola con manteca, dejar hervir sin dejar de revolver.
- Diluir con un poco de agua la molienda de chiles.
- La molienda ya diluida de chiles, pasarla por el colador e incluirse la cacerola con lo anterior.
- Sazonar con sal y revolver.
- Sazonar con azúcar, revolver nuevamente y dejar hervir.
- Licuar el pan con un poco de agua, pasar por el colador y agregar a la mezcla.
- Mantener el mole en el fuego revolviéndolo hasta que este hierva.
- Servir con una pieza de pollo y acompañado de arroz.
