- Lo primero es poner todos los ingredientes a la mano para que no se olvide ninguno (es lo que tienen los postres)

- Ponemos a cocer el arroz con agua durante unos 10 minutos aproximadamente a un fuego medio-alto.

- Mientras ponemos a fuego lento la leche con las dos ramas de canela y las peladuras del limón para que vaya infusionando.

- También mientras se cuece el arroz podemos ir picando las galletas para hacer la base de la tarta. Para ello trituramos las galletas y la mezclamos con la mantequilla derretida.

- Ponemos en la base del molde que vayamos a utilizar la mezcla anterior y la vamos compactando hasta hacer una masa firme. Metemos en el frigorífico para que vaya tomando cuerpo.

- Pasados los 10 minutos de cocción del arroz en el agua, sacamos el arroz y lo metemos en la leche junto con el azúzar, podemos retirar si queremos la cáscara del limón en este punto. Lo dejamos cocer por un periodo de otros 10 minutos.
- Introducimos las hojas de gelatina en agua fría para que se vayan hidratando mientras termina de cocerse el arroz.

- Retiramos el arroz del fuego y añadimos la gelatina, damos unas vueltas y volcamos sobre la base de galletas que hemos sacado del frigorífico.

- Dejamos reposar en el frigo, una vez que se haya atemperado un poco la tarta, por lo menos durante 4 horas para que la gelatina actue. Sacamos del frigorífico, y espolvoreamos con un poco de canela molida o azúcar quemada o lo que queráis y a dar buena cuenta de ella.
