Las ATÁPAKUAS son un platillo original y poco difundido, tienen un origen prehispánico y son tradicionales de la zona purepecha del Estado de Michoacán. Aunque no hay una traducción exacta de la palabra al español, parece que proviene de "ata" que significa "untar" o "nutrir, sustentar la vida", "pa" "fuego, ardiente o quemante", "kua" es la "acción", de ahí ATÁPAKUA significa "guiso nutritivo picante que sustenta la vida". Sus ingredientes básicos el maíz y el chile y el hecho de que no se frían, son sin duda precolombinos*

Las ATÁPAKUAS son platillo muy completo y variado, la base consiste en una mezcla elaborada con diferentes especies de chiles y condimentos y el espesante o sïndurhakua que se obtiene al moler un maíz especial, el seneri que aunque es pequeño contiene una fécula particular a la que se le añaden verduras, quesos, pescado seco o carnes, hongos, granos y semillas, el espesante puede ser maíz molido, arroz, harina o pepita de calabaza.**

  2. 3-4 chiles guajillo
  3. 1/2 cebolla
  4. 1 pimiento morrón verde
  5. 3 jitomates
  6. 1 cda harina de maíz
  7. pimienta
  8. 1 pizca clavo en polvo
  9. sal o consomé en polvo
  10. PARA HACERLO DE CARNE: carne en cubos, cilantro, granitos de elote, 2 dientes de ajo, jitomate y cebolla
  11. Tortillas para acompañar

  1. Se ponen a cocer 3 o 4 papas y se rebanan.
    Se remojan en agua hirviendo 3 o 4 chiles guajillo, 1/2 cebolla y 3 jitomates.
    Se limpia un pimiento verde y se pone 1/3 parte en la licuadora junto con los chiles guajillos, la cebolla, el jitomate y una cucharada de harina de maíz o harina de trigo, se muele, se cuela sobre las papas se sazona con pimienta, una pizca de clavo en polvo, sal o consomé en polvo.
  2. Si se quiere hacer DE CARNE se fríe un poco la carne y se le muelen granitos de elote en vez de la harina y unas dos ramas de cilantro con los chiles guajillos y el jitomate, la cebolla y dos dientes de ajo, sal y pimienta y se deja hervir hasta que se cueza la carne.

    En Michoacán generalmente se acompaña con tortillas y con corundas que son unos pequeños tamales de forma triangular.
