  7. Ponemos a hervir el maíz con mucha agua, sal, cebolla y ajo, moverlo regularmente para evitar que se queden pegados los granos
  8. Dejarlo cociendo entre 6 y 7 horas hasta que se revienten los granos de maíz
  9. Después que hierva dos o tres horas agregamos la carne
  10. (Necesitamos tener agua caliente a la mano para rellenar un poco de la que se vaya evaporando)
  11. Mientras tanto lavamos y limpiamos los chiles huajillos
  12. Los ponemos a cocer con agua unos 15 min (hasta que estén suaves)
  13. Molemos el Chile con agua, cebolla y ajo
  14. Lo colamos para quitar todo el pellejo del chile
  15. Después de otras dos o tres horas retiramos la carne del maíz (cuando veamos que ya está bien cocida) y la tapamos para que no se seque
  16. Agregamos el chile molido, rectificamos la sal y dejamos que se cocine otros 45 minutos
  17. Servir y decorar con orégano, lechuga, rábanos y cebolla
  18. (Al gusto puede llevar aguacate y chicharrón)
